Colombia Huila Palestina Pink Bourbon Washed
High in the mountains of southern Huila, volcanic soils and striking elevations create ideal conditions for the cultivation of specialty coffee. Here, a dedicated group of producers led by Linarco Rodriguez Ospina has come together to produce this exceptional Washed Pink Bourbon.
Grown at 1,700 - 1,900 meters above sea level in the small township of Palestina, this lot reflects a shared commitment to quality, consistency, and innovation. Under Linarco’s leadership, the producer group follows rigorous standards designed to showcase the clarity, elegance, and vibrant complexity that have made Palestina one of Huila’s most sought-after coffee origins.
The result is a coffee that captures both the distinctive character of Pink Bourbon and the collective expertise of producers working toward a common goal: expressing the very best of Palestina in every cup.
Washed Processing
To preserve the purity and character of the variety, cherries were selectively handpicked at peak ripeness before being floated to remove lower-density fruit.
After depulping, the coffee underwent a carefully monitored fermentation that served to enhance aromatic complexity while maintaining varietal clarity. The coffee in parchment was then thoroughly washed and transferred to solar drying canopies, where moisture was reduced slowly and evenly under controlled conditions.
This meticulous washed process allowed the terroir of Palestina and the unique attributes of the Pink Bourbon varietal to shine through.
Pink Bourbon
Prized for its vibrant aromatics, layered fruit character, and refined acidity, Pink Bourbon has become one of Colombia’s most celebrated specialty coffee varieties.
While its exact genetic heritage continues to be studied, Pink Bourbon has earned worldwide recognition for producing coffees that combine floral elegance with bright citrus, stone fruit sweetness, and exceptional balance. The variety thrives in Colombia’s high-elevation environments, where cooler temperatures enable slow cherry maturation and greater flavor development.
The Huila Department
Located in southwest Colombia, Huila is widely regarded as one of the country's premier coffee-growing regions. Towering mountain ranges, nutrient-rich volcanic soils, abundant water sources, and high elevations provide ideal conditions for producing coffees of exceptional quality.
The region's significant day-to-night temperature swings slow cherry development, allowing sugars and acids to accumulate gradually. This extended maturation period contributes to the bright acidity, sweetness, and complexity that have become hallmarks of Huila coffees.
